Tabouleh is a refreshing Middle Eastern salad known for its vibrant flavours and nutritious ingredients. This recipe combines the traditional elements of tabouleh with the optional addition of sweet and tangy pomegranate arils, adding a delightful burst of flavour and visual appeal.

Cook the bulgur wheat according to packet instructions ( usually it's just covering with hot water and letting it soak for 10 minutes)

Finely dice the tomato, red onion, cucumber and capsicum. Add to a large salad bowl.

Add the cooked bulgur to the bowl with veggies.
4.
Finely chop the parsely and mint, add to the bowl.
5.
Drizzle extra virgin olive oil all over, then squeeze half a lemon over the salad.
6.
Enjoy as a side, or add a protein source to make it a balanced meal.
Protein source could be: chicken breast, grilled snapper, slow cooked lamb, hard boiled eggs or haloumi cheese. Additional option: add pomegranates for a burst of flavour and a little sweetness, that packs a lot of antioxidants.
