This is a great meal prep recipe for lunches, high in fibre and protein, with a good 2 serves of veggies.

Dice the sweet potato and bake on 180C.

Warm the brown rice microwave cup for 40 seconds (peel back half the plastic cover first). Then add to a large mixing bowl.

Dice the red onion, cucumber and cherry tomatoes, add them to your bowl.
4.
Drain the tuna water, then add the tuna to the bowl.
5.
Chop the baby spinach, and add it with the brown rice and tuna. Drizzle a little extra virgin olive oil on top.
6.
Add the sweet potato once baked, mix thoroughly then divide the salad into bowls or containers.
2.5 serves of veggies per serve in this salad.
