Nachos but make it fibre-fueled. Sweet potato replaces corn chips in this version of nachos - for those looking for a little extra fibre and adding one more serve of veggies in your day.

Slice your sweet potato in round slices and lay flat on a baking tray. Bake for 20 minutes with a drizzle of olive oil.

Dice your tomato, red onion and capsicums. Drain and rinse the kidney beans.

After 20 minutes, take the sweet potato out of the oven and add diced veggies, mexican spices, kidney beans, tomato passata and cheese. Place back in the oven and bake for a further 25 minutes.

Make your guacamole with 1/2 avocado, you can add some red onion and lime if you like.

Once fully baked, serve nachos with guacamole.
1. Legumes (beans, lentils, peas) are a great source of plant protein and contain some iron as well. They feed beneficial bacteria in the gut microbiome and are essential for a balanced plant based meal. Of course you can swap the sweet potato for corn chips using the same recipe for the beans, you just don't need to bake for as long with corn chips.
